Gloucester Cheese and Ale 
- a popular savoury dish served hot to travelers at coaching inns or posting houses.

6 oz. double gloucester cheese thinly sliced
1 teaspoon made English mustard
About 4 to 4½ oz. brown ale
4 thick slices of bread, freshly toasted

Serves 4

Set oven to 375ºF. Arrange the cheese slices in the bottom of a lightly buttered ovenproof dish and spread on the mustard. Pour on sufficient ale just to cover the cheese. Cover with foil and cook for 10 minutes or until the cheese has softened and mingled with the ale. Pour the cheese and ale mixture over the toasted bread and serve at once.
