Frazzled Beef - sometimes
known as 'Frizzled Beef', this quickly prepared Monday washday meal, used up Sunday
leftovers. Originally the fat used in this recipe would have been beef dripping.
A 'walnut' of butter or a
little olive oil
1 or 2 medium onions, peeled and finely chopped
Cold mashed potato
Salt and black pepper
8 slices cold beefServes 4 |
Heat the butter or oil in a
frying pan and fry the onions until soft. Stir in the potato, season well, press
down to form a 'pancake' and cook on both sides until golden brown. Remove from the
pan on to a heated serving dishand keep warm. Add a little extra butter or oil to
the pan and lightly fry the beef slices on both sides to heat them through. Arrange
on top of the 'pancake' and serve with a thick brown gravy. |
