Essex Devilled Whitebait

every year a blessing of the first whitebait catch is held at Southend. This fish is
caught in large numbers along the south Essex coast.
1 lb. whitebait
4 tablespoons flour
2 teaspoons curry powder
½ teaspoons chilli powder
Black pepper
Lemon wedges
Oil for fryingServes 4 |
Wash the whitebait, dry well
on kitchen paper and set aside. Put the flour with the other dry ingredients in a bowl and
mix well. Heat the oil very hot in a deep pan. Coat the whitebait in the seasoned flour
and fry in the oil, a few at a time, until crisp (about 2 - 3 minutes). Remove with a
slotted spoon and drain on crumpled kitchen paper. Keep the cooked whitebait hot in the
oven until they are all cooked. Serve with thick lemon wedges and buttered brown bread. |
