Greengage Tart - in the 18th
century, Sir William Gage planted some unknown plum trees in the orchard of his estate
near Bury Saint Edmunds. They produced delicious yellow-green fruit, that became known as
Green Gage's Plums, later corrupted to Greengage.
8 oz. shortcrust
pastry
1 lb. greengages, washed, halved and stoned
1 dessertspoon sugar, optional
2 eggs, beaten
1 pint single creamServes 4 |
Set oven to 400ºF. Line a 7
inch flan dish with the pastry and bake blind for 10 minutes. Arrange the greengages, cut
side down, in the pastry case and sprinkle with the sugar, if desired. Beat the eggs and
cream together, and strain over the greengages. Cook for 30 to 35 minutes or until the
filling is golden and puffed up. Serve warm with extra cream. |
