Summer Strawberries - simple
yet elegant strawberry desserts, such as Summer Strawberries
were popular during the
Edwardian period at Polesdon Lacey where the society hostess,
Mrs.Greville, liked to have
them served all the year round.
½ lb.
strawberries, rinsed and hulled
3 small oranges
1 dessertspoon caster sugar
4 tablespoons white wine
1 tablespoon brandy
Washed maidenhair fern sprigs to decorateServes 4 |
Cut the strawberries in half,
if they are large. Peel 2 oranges, removing all the pith and pips and cut into thin
slices, then cut in half. Combine the strawberries and orange slices lightly and place in
a glass bowl. Squeeze on them the juice of the remaining orange. Sprinkle with the caster
sugar, then pour the wine and brandy over. cover and chill very well. Just before serving,
stir the dessert lightly and decorate with sprigs of maidenhair fern. |
